I’ve never loved pancakes but these have become one of my favorite meals. The recipe is only 4 ingredients that are mixed together in the blender. I like to make double or triple the recipe and freeze some in individual bags to use on different days.
These cook like traditional pancakes but are light and extremely thin….that might be why I love them so much.
Serve with a variety of toppings, if you are trying to watch your carbs or have these as part of a Keto lifestyle be sure to use sugar free syrup.
Cream Cheese Pancakes
- 8 ounces cream cheese softened
- 8 Eggs
- 2 tsp Cinnamon
- 1 tsp errythritol
- Add all 4 ingredients to a blender and blend until smooth.
- Heat skillet to medium and pour batter into circles to desired pancake size. When they start to bubble flip pancake over to cook other side and remove once cooked.
- Serve warm with desired toppings.
