This one pan meal is delicious and I love that there is little clean up involved with this recipe.  The Mexi Bowl is good with suggested toppings or by itself.

Mexican Zucchini Bowl

Servings 4

Ingredients
  

  • 1 lb ground beef
  • 4 garlic cloves
  • 1 zucchini, diced
  • 1 summer squash, diced
  • 10 ounces diced tomatoes and green chilies
  • 1 tbsp chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • salt and pepper
  • Avocado, diced
  • Sour Cream
  • shredded cheese
  • salsa

Instructions
 

  • Brown meat and garlic over medium heat. When meat is fully cooked drain and return to heat.
  • Add zucchini, summer squash, diced tomatoes and green chilies and all spices. Mix well. Turn to low, cover and cook for 10-15 minutes, stirring occasionally.
  • Serve in bowls and top with avocado, sour cream, shredded cheese and salsa.
