Sheet Pan Fajita Bowls


  • 1 lb chicken tenders
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 3 garlic cloves, diced
  • 1/2 onion, sliced
  • 2 tsp chili powder
  • 1 tsp Cumin
  • salt and pepper
  • 1/4 cup olive oil
  • 1 Avocado, diced
  • salsa
  • Sour Cream
  • Cheddar Cheese, shredded


  • Preheat oven to 400. Line a jelly roll pan with foil and set aside.
  • Combine chili powder, cumin, salt and pepper. Set aside.
  • Toss chicken and vegetables in a bowl and evenly cover with olive oil. Top with spice mixture. Mix to cover all pieces of chicken and vegetables.
  • Spread out vegetables and chicken on foil lined pan and bake for 24-26 minutes.
  • Serve in a bowl and top with avocado, salsa, sour cream and cheese.
