Chicken Pepper Keto Soup

Ingredients
  

  • 1 pound chicken breast, cooked and shredded
  • 2 peppers, diced (any color)
  • 1/2 white onion, diced
  • 8 ounce can diced green chiles
  • 4 garlic cloves, minced
  • 8 ounces cream cheese
  • 1/2 cup heavy whipping cream
  • 2 tsp cumin
  • 1.5 tsp oregano
  • 1 tsp Coriander
  • 1/2 tsp cayenne pepper
  • salt and pepper
  • 32 ounces vegetable broth
  • 2 cups monterey jack cheese, shredded

Instructions
 

  • Add all ingredients except cheese to slow cooker. Cook on low for 2-4 hours.
  • 10 minutes before serving stir, add shredded cheese. Stir again just before serving.
  • Optional - serve topped with avocado slices, sour cream cilantro and shredded cheese.
